One of the things that tics my off is the ACC sensor clogs with snow. I see the 2021 has a flat sensor. Can they be swapped?

Even if swappable, the new sensor has to be calibrated, and it is not a DIY procedure. Maybe you should consider a flat plastic shield of some sort?

Not sure I'd be too concerned about using ACC if its clogged with snow...if that happens, it means its snowing, which means you shouldnt be using cruise control and should be ultra aware of your driving and attention.
Doesn’t the FCW system use that sensor as well?

I don't use it in the snow, but it sets a warning light on the dash that's annoying. Only way to shut it off is clearing it manually.
