Coolant reservoir hole on bottom

That hole is definitely for the coolant level sensor. Of course since you didn't have the old reservoir, you'll need a new sensor too (Chrysler p/n 68322808AA). It's pathetic that the dealership wasn't able to provide this information for you. A dealership is currently the only source for a new coolant level sensor too.
 
Not the right part number. Hole is actually a overflow and only has a small hose in case pressure rises and can boil over. Wiring is for water temperature sensor next to thermostat. Actually found another Pacifica owner and asked if i could unbolt their water tank to see what was missing on mine.
Yes, you're right. If you remove the cap you can see the pressure relief hole that leads to the hole in the bottom of the reservoir. I thought that level sensor looked too big to fit in that hole in the bottom of the reservoir, but I didn't have the van handy to look and confirm my suspicion. I meant to look when the wife got home, but forgot all about it.

In my defense, Mopar's official parts site says part number 68322808AA fits all 2017-2019 Pacifica. However, I can't find an illustration or a listing for it in any of the diagrams when performing a manual search by part category/description.

My question is If the coolant level sensor doesn't go in the reservoir, where is it located? The service information I have access to doesn't mention a coolant level sensor at all, but I can't tell if this is intentional or an oversight. I suppose it's possible, but I find it hard to believe that this vehicle wouldn't have a coolant level sensor.

I'm glad you got it figured out, but feel bad for telling you to buy something you didn't need. I apologize for the misinformation.
